A day of Relish Eating: Breakfast, Lunch & Dinner

Ready to dive into Relish Life but you’re unsure if you’re going to relish what you’re eating? Here are a few ideas we’re loving to build out our nutrition routine!

Breakfast

Shared by EatingWell, this Southwestern Waffle recipe packs a savory flavor punch to start the day. The addition of luscious avocado and fresh salsa to the basic waffle and egg combo is an easy and tasty way to level up this breakfast combo. It is so fresh and colorful; it makes us happy just to look at it, let alone eat it! It’s hard to believe that for only 207 calories, you still get a super filling 9 grams of protein and 6 grams of fiber.

Lunch

If you often find yourself eating lunch on the run, easy and packable are vital ingredients for success. We love this recipe from Cooking Classy for Tuna and Chickpea Pita Pocket Sandwiches. Simple ingredients that come together quickly are lunch bag friendly and totally delicious! For variety, substitute chicken for the white Albacore tuna. YUM!

Dinner

Two words, Buddha Bowls! Build-Your-Own Buddha Bowls is a cornucopia of possibilities you’ll relish! Start with a base of whole grains such as a ¼-½ cup of quinoa, farro, wild rice, or whatever your favorite may be, and start building your bowl by adding colorful raw or steamed veggies, lean proteins, and light, flavorful dressings. If you want to add cheese, go for intensely flavored cheeses, such as feta or blue cheese, and use sparingly. These bowls are a fantastic way to use up whatever you have on hand or repurpose leftovers into exciting new combinations. Relish Eating Dessert

Don’t forget dessert! Fresh seasonal fruit is always a winner for us at Relish! Right now, we’re eating fresh sliced pineapple, sprinkled with just a dash of raw sugar or honey, and chopped mint. It may sound like an odd combination, but we promise that you’ll be craving it once you try it! It’s perfect for a light summer dessert, but, honestly, it’s our anytime go-to. Bon appetite!
